All Beef and Lamb is supplied direct to the shop from our two local Meat Wholesalers, Mathers (Inverurie) Ltd & Scotch Premier Meat Ltd. I have close relations with these companies as I have worked with them for many years, one of which I was an employee for some 14 years prior to becoming a butcher.
All the Beef for the shop is hand picked from Local Aberdeenshire farms and selected to my specific specifications of size, grade, colour, marbling etc. Whole carcase meat is brought in to the shop weekly and topped up with choice cuts which are selected, hung for 14 days and boned at the factory before delivery where they are left to mature for as long as it takes for the meat to become of the standard my customers are used to.
All our Lamb is Specially Selected Scotch Lamb sourced directly from either of the local abattoirs. We are quite specific as to the size and grade of lamb we require and always demand top quality and as local as possible.
Our Pork comes from the family farm where we have control of the quality and size required for our shop. We use pigs that are much larger than usually handled in most butcher shops as the yields are much better and the conformation is fuller, just what we need to cure our own Bacon and Gammons. The pigs are slaughtered at Scotch Premier Meat Ltd who deliver them along with Beef and Lamb.
